Apple-Chia Crisp with Salted Maple Yogurt

Serves 10 to 12

FOR THE CRUMBLE

  • 2 cups old-fashioned rolled oats
  • ¾ cup almond flour
  • ¾ cup melted coconut oil
  • ½ cup packed brown sugar
  • ½ cup slivered almonds
  • ¼ cup shredded unsweetened coconut
  • ¼ cup roasted salted pepitas
  • 1 teaspoon ground cinnamon
  • ½ teaspoon kosher salt

FOR THE FILLING

  • 5 Honeycrisp apples, peeled, cored, and thinly sliced
  • 5 Granny Smith apples, peeled, cored, and thinly sliced
  • ¼ cup packed brown sugar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chia seeds
  • 2 teaspoons ground cinnamon
  • ½ teaspoon freshly grated nutmeg
  • ½ teaspoon kosher salt

FOR THE YOGURT

  • 1½ cups unsweetened coconut or Greek yogurt
  • 1½ tablespoons maple syrup
  • ¾ teaspoon kosher salt
